Almost a Fail - Pineapple Pecan Cake

Not the prettiest cake, however it taste GREAT as it slides over your tongue!
Girl sees recipe and thinks,"Yum!"
After scanning the pantry and 'frig shelves, girl thinks,

"I bet that pineapple cake mix would work just fine AND cherry pie filling with pecan cream cheese frosting will be amazing!"

Lovers of cherry pineapple dump cake, you all know what I'm talkin' about don't you?

Anyway, I assembled my ingredients and began to follow the recipe directions exactly, except for my adjustments.

Then, the hubby said,"Who is that cake for?" and I being a good wife replied,
"For you honey"
Guilt caused me to say it. I swear. I know he isn't getting enough quality time with me lately. 
Cake batter ready for the oven. Ignore the aluminum foil in the picture.  I was making supper and baking at the same time. 
Even though I knew that cake needed to be cooled on the baking rack, wrapped up in plastic wrap, and chill in the 'frig overnight, I told him it was for him....tonight.

I need to make sure my man knows he is first, don't I? Go ahead, laugh with me!

Now onto the sad part, the fail.

I used a pineapple cake mix I bought on sale to see how it would taste. Here is a one word description for the taste of the cake mix- artificial.

Yep, I could taste the artificial pineapple flavoring in spite of the fact that I put a 20 ounce can of crushed pineapple, juice and all, into the batter.

Impatient to get the cake to cool down,
I placed the almost hot cake in the freezer compartment of my 'frig for an hour or so. Thinking it was cool because it was cool to the touch, I cut the nine inch, round layer in half to discover.....warm cake.

Too bad I had already separated the halves.
The cake hadn't separated cleanly in half. The warm center of the cake stuck together and pulled the center of the top cake layer out,leaving a bowl shaped center in the cake round. AND, the darn top layer started cracking apart.

However, I went ahead with filling and stacking the cake.
Carefully, I spread a thin layer of frosting over the cut sides of each layer before piping a border, or dam of frosting, around the outside edge of the bottom layer. The cherry pie filling filled the dam, or circle of frosting on the bottom layer. Quickly, I flipped the top layer onto the bottom layer, spread more pecan cream cheese frosting over it to hide the cracks, and sprinkled it with chopped pecans.

Yes, I could have waited, but the hubby was waiting for a slice of cake! 

Yes, my cake was almost a fail.
After sitting in the 'frig overnight, the cake settled down and sliced into beautiful even slices! After spending twenty-four hours in the refrigerator, the artificial flavor was not nearly as apparent. Plus, cherry pie filling and pecan cream cheese frosting do indeed meld into a sweet, silky smooth marriage of flavor that is heavenly.

Moral of this Story
 "Haste in cake makes waste." BUT we still ended up with a slice of homemade happiness on a plate!
After chilling in the 'frig overnight, the cake sliced perfectly.

NOTE
The original recipe calls for an 18 ounce cake mix. Due to downsizing, most cake mixes are NOW less than 16 ounces. You have two choices.
1. Use two 8 inch round pans, or
2. Use 2 boxes of cake mix, fill three 8 inch round pans, and make cupcakes with the extra batter.

Sallee'sSix - Six Dish Summer Fun Menu!


Summer camping and traveling begins tomorrow! It is Memorial Day weekend, the official start of summer fun! I am sharing a list of six easy recipes for a wonderful summer weekend meal! Create your own summer fun menu from the choices below. 

Your Summer Fun Menu

  • Non-alcoholic drink - pick your lemonade from your choice of 40 flavors. I think I would like to try the watermelon lemonade.
  • Main dish - Strip steak seasoned with fresh garden herbs. Sallee's tip: Mix the herbs with 20 oz. of ground chuck for five, quarter pound garden burgers.
  • Salad - original "like your grandma's" traditional potato salad, or a delicious blackberry salad that features a bed of salad greens, a scoop of cottage cheese surrounded with fresh blackberries and sprinkled with slivered almonds and tangy sweet dried cranberries. 
  • Pick a veggie - How about grilled corn, grilled veggie skewers, or grilled romaine hearts?
  • Dessert for Family Fun- How about chocolate covered strawberry s'mores for dessert?

SalleeShares: My New Spice Love, Garam Masala


How many spice containers are sitting in your cabinet right now?
Five, ten, twenty? My two spice shelves are full, full, full right now. A friend is moving to Oklahoma and guess who was gifted with a box of spices? The bottle that excited me the most was a brand-new, unopened bottle of garam masala.

What's garam masala you ask?
Garam masala is an Indian spice blend that is used in dishes such as Chicken Masala. Anyhow, I tried it out by making a chicken dish called "Fragrant Garam Masala Chicken Stew with Peas and Potatoes." Well, Bill's assessment was - It's Okay, but...and I agreed with him. No more savory applications of garam masala will be making an appearance on the Bonham dinner table. However, my taste buds took notice of the warm flavors that were reminiscent of fall baking and autumn holidays. 

Garam masala reminds me of an apple pie. Yum! 

I searched "garam masala + apple pie" on Google and found that several other baker/bloggers have discovered this yummy combo too! Below are the top six results for my search and a quick note on the information that I learned.
At The Kitchn, garam masala was substituted for the pumpkin pie spice in their apple pie recipe and loved the switch!

The Glamorous Housewife decided to pair a sour cream apple pie with garam 

masala. I have no experience with chai tea, but the Glamorous Housewife assures readers 
that garam masala is reminiscent of chai tea flavor. Hence, the name of her pie.
Another believer in the pairing of garam masala and apple pie. A recipe is included.

And another believer of this pairing! A great recipe from vegan cookbook author 

Terry Romero. Are you seeing a pattern here?

Indian as Apple Pie is actually the next THREE search results. However, they

believe garam masala is as Indian as apple pie is American! 

Another use for the apple and garam masala! Put it in chunky apple sauce, or any 

applesauce!


I am going to be reaching for garam masala the next time I make apple spice cake, 
apple pie, apple tarts, or apple anything. Be looking for my new spice love - garam

My Big Cake Adventure - A Trio of Half Sheet Cakes Part 1

The basic ingredients for three half sheet cakes.
I updated the ingredient list on 4/29/2015. The cakes required another dozen eggs and one more two pound bag of powdered sugar.
For those of you who are new to my blog, I work at an elementary school. 

The annual state assessment testing is almost here. As an incentive, third through sixth grade students are served cake with lunch the day before testing starts. This year, my boss asked me if I thought I could make the cakes. 

Now, how did she know I had just bought a half sheet cake pan? Of course I agreed to make the cakes. I like to challenge myself with cake baking projects. Now I had to find out the answer to another question.

What I would need to make and decorate three half sheet cakes?
I am a home baker. I have decorated mini-cakes, 8 inch and 9 inch layer cakes, and even made my own wedding cake with spring form cake pans. (It looked like a tower of cake, but we were thrilled with it!) I am also familiar with 13 x 9 x 2 inch cakes that require one cake mix. However, I do not normally take a cake that size out of the pan, put it on a cake board, and decorate it. Plus, I needed to figure out how many cups of cake batter and  butter cream frosting I would need to frost and decorate the cakes. 

How many cake mixes would I need?
The directions that came with my half sheet cake pan said I would need three to four cake mixes per cake. A friend, who also has a half sheet cake pan, told me two mixes would be enough. Seeking to confirm the number of mixes I would need, I turned to an online search engine for answers. 

BettyCrocker.com is a very helpful website for a home baker. A Betty Crocker cake mix makes four to four and a half cups of cake batter. Plus, I found a list of how many cups of cake batter you need to make different sized sheet cakes. Yippee!  Fourteen cups of cake batter, or four boxes of cake mix per cake was listed to make one half sheet cake. I decided to go with three boxes of cake mix per cake.  

How much frosting would I need to make?
My online search also revealed the answer to my frosting question. Seven cups of frosting will frost a half sheet cake. My butter cream frosting recipe yields four cups of frosting. A double batch will give me a cup of extra frosting to use for piping borders. Okay, now to sit down and figure out the ingredient amounts.

Sallee's Ingredient List for Three Half Sheet Cakes

  • 12 - 16.5 ounce boxes of white cake mix
  • 1 - 48 ounce bottle of canola oil
  • 3 dozen large eggs
  • 6 - 2 pound bags of powdered, or confectioners sugar
  • 1- 48 ounce can of vegetable shortening
  • 1 pound of butter
  • 1 pound of margarine
  • 1 can of canola oil no stick cooking spray
Let the Baking Begin!
Actually, I will not be baking until Saturday. However, I am going to start making  the royal icing cake top decorations tomorrow, three days before I start baking cakes. 
ABP (After Blog Post lol...lol),  I changed my mind about making royal icing decorations. Instead, I chose to stay with a method that I am familiar with - home made, rolled butter cream fondant.

Sallee's Six - The Cupcake Pull Apart Cake Edition


In America, we celebrate with cake! Baby showers, birthdays, sporting events, weddings, and holidays are celebrated with cake. Okay, some Americans celebrate with pie. However, in my opinion, cake is the popular choice. 

Custom Cake and Cupcake Prices
Custom cake prices usually cost about $2.35 to $3.00 per serving. Just think about that for a minute, a cake large enough to serve 100 people can cost $300. Custom cupcakes can cost as much as $1.75 each, or $21.00 a dozen, for standard size cupcakes. However, a well known bakery, such as Charm City Cakes, charges $6 - $9 per serving AND this cost does not include labor. Prices like these cause home bakers to attempt making their own specialty cakes, or cupcakes, at home.

Home Baker Costs for Cupcakes
One cake mix makes twenty-four standard cupcakes. One container of frosting will generously frost about eighteen standard cupcakes. The total cost for a cake mix is about $1.00 to $1.99 each and a container of frosting is $1.19 to $2.35 each. A container of cupcake liners is another dollar or two.Using these prices, you can bake and frost 24 cupcakes for about thirty-six cents each.

Bill and I stopped in at our local Steak and Shake for the Milkshake Happy Hour (2:00 PM-4:00 PM) this week. We ordered the Double Chocolate Fudge flavor. Oh my gosh! Thick, frosty chocolate, fudgy goodness in a cup. Topped with whipped cream and a cherry. I was so full that I didn't want supper.
